XX茶品质特征分析 刘XX,王Xx2 (1.XX省XX科学院,湖北武汉43000032.XX研究所,湖南长沙410000 摘要ε为了探明XX茶白茶品质特征,采摘春季ⅹX茶群体鲜叶加工白茶,对样品进行感官 品质审评和生化成分分析。结果表明,Xⅹ茶外形白毫满披、芽头肥壮,汤色杏黄、亮,香气 花香、稍浓郁,滋味鲜醇尚爽,叶底嫩、完整、亮:水浸岀物含量为42.42%,茶多酚含量为 3686%,游离氨基酸含量为366%,咖啡碱含量为458%,儿茶素含量为1192%。香气组分 检测共获得45种成分,其中主要香气成分有水杨酸甲酯、香叶酸甲酯、香叶醇、β芳樟醇 反-3,7-二甲基-26-丁二烯酸、β紫罗酮、橙花叔醇、1-乙基-2-甲酰吡咯、3,5-辛二烯-2-酮、氧 化芳樟醇Ⅱ(呋喃型)、氧化芳樟醇Ⅰ(呋喃型)、2-丁基-2-辛烯醛、反,反-3.5-辛二烯-2-酮、 α-雪松醇、橄榄醇、2-正戊基呋喃、橙花醇、顺-苿莉酮、苯乙醇、苯甲醛和56-环氧-β-紫罗 酮等。 关鍵词εXX茶;白茶:品质特征 Analysis on the quality characteristics of xx tea Liu xx, Wang XX (I. The sensory quality of the samples w evaluated and the biochemical components were tested. The results show that the white tea of Rucheng white tea white tea is full of white hair and buds, and the soup is apricot yellow, bri fragrant, slightly rich, fresh and fresh, and the bottom of the leaf is tender, complete and red ontents of water extract, tea polyphenol, free amino acid, caffeine and catechin were 42.42% 36.86%,3.66%,4.58% and 11.92%, respectively. The aroma components were detected in 45 components.
